Who Am I?

In a nutshell, I’m an environmental engineer who’s worked in both the private and public sectors in the wastewater industry. More importantly, I’m deeply passionate about reducing global food waste.

I’ll be honest: I’m a lazy cook. If a recipe takes more than 45 minutes, I’m simply not interested. If I don’t have the time to cook these meals, I don’t expect you to either. What’s the Point of the Book?

According to Feeding America, the US wastes 92 billion pounds of food every year, the equivalent of 145 billion meals ending up in landfills. Every year.

The goal of this book is to help you reduce the amount of food that ends up in your trash that could’ve ended up in your stomach. Essentially, it’s about turning potential waste into extra meals and snacks, saving you money while helping the environment. Inside, you’ll find practical ideas for using up groceries before they spoil, all while keeping food safety in mind to protect you and your family’s health. Think of this as your go-to reference guide for when your fridge feels too full and you want to make sure food doesn’t go to waste.
